Do you have a backup of your contents? When the iPhone showed the screen with the USB cable and said to connect to iTunes, it had already entered the recovery mode which means all content had been erased. So you need a backup from before the water damage and problems started to get your contents back.

Are you trying this with Reader or Acrobat? If with Reader, are you submitting the form or the data (only the data is needed since it can be imported to the form)? If you are submitting the form in Reader, either change to data or activate Reader Rights. If you do the latter, read sec. 15 of the EULA to be sure you will not exceed the 500 use limit for your application -- you don't want to end up in court because of not reading. The data submission is not limited by the EULA.
E-mail also has issues for general form use since it is problematic for particular OS setups. It is always better to submit to a web script.

What do you mean the "update" says plug it into iTunes? If you have the iTunes logo/USB cord on the screen, it's in recovery mode or needs to be activated. Anything that was on the phone is already gone. You have no choice but to plug it into the computer. Hopefully, you backed it up before you started the update.
If that's not what you mean, then please explain.
Apple may or may not be able to fix the lock button for you without replacing the phone entirely. You'll have to take it in and ask.

If it never worked after the screen replacement then it would appear that you have a hardware problem either caused by the repair or the problem that lead to the screen replacement.

I wouldn't suggest it though, since it may void your warrantee. Apple will replace it if you bring it in. The genius bar guys aren't too bright, well most of them. But they'll go through the usual diagnosis steps then issue you a replacement if they have them in stock.
I have to admit, Apple has one of the best replacement services that I've ever experience. If you're familiar with costco, the return/exchange process is very quick and painless.

You can use the alternative called assistive touch to enable assistive touch go to settings>general>Accessibility>scroll down to the bottom of the page and enable assistive touch a white dot at the bottom right of your screen will appear press the white dot and you will see the home button

If the screen and iPod does not show any life then letting the batter drain will not do anything.
If you tried another cable and tried ReBoot on another computer and still problem then your iPod has to be repaired/replaced

Has the home button worked in the past, or is this been something that hasn't worked for some time? The only way to reset the device is with the sleep/wake (power) and home buttons together. Without it, you would have to wait until the battery dies and then plug it in to try and reset it. The Home button is used for several user troubleshooting steps. Without it, you cannot perform a reset, put the device into recovery mode, or place it in DFU mode. You need to get the home button repaired.
