Why do scrolldown menus of 8 lines get condensed to merely 1 line in Safari? Can I stop that from happening?

Why do scrolldown menus get condensed to merely 1 line in Safari?    If one uploads the following html to any page that one has on the web, the menu should have around 8 lines that are visible.   At least that's how it works in Google Chrome and in Microsoft's Internet Explorer.   In contrast, though, it appears as merely one line on the iPhone or even the much larger iPad screen.   As a result, visitors don't know to look for it and click onto that line in order to enlarge it and thereby make its categories visible and available.   Any suggested modifications to make 8 (of 10) lines appear, instead of merely one, please?
