So couple days ago my iphone was stolen and i know about my iphone tracker because i've downloaded it and registered my device with it
but obviously the theif will take my sim card out will I be able to track the iphone with their own sim card if they have internet credit on their sim card.

If FindMyiPhone was turned on, you can trace it as you said, the thief cannot turn that off (iOS7). He can not use it. You can send a message and make your iPhone a dead brick, as soon as he iPhone connects to internet. Tell the police where you see it.

I have a passcode for my iPhone, but I don't have the application Find my iPhone. Can I retrieve my photos, notes, reminders and all other data in my iPhone, I mean, if I bought another one, and connect it to my computer and go to iTunes then restore backup, cause I backup my iPhone last Oct 10, 2013, will I recover all the details in my iPhone that was stolen? I looked online and an article (this one to be exact: http://support.apple.com/kb/HT4061?viewlocale=en_US&locale=en_US) told me to go to iTunes>Preferences>Devices and then select my device and it would tell me the serial number. However, when I got to the devices menu, my iPhone didn't show up, but my dad's did. Any idea on how to get it to show up or an alternate way to get the serial number (I don't have the box or the phone)?

Yours was stolen, it will not show up in iTunes. There is no way to get your serial number unless you registered it with Apple: Your Support Profile for Registered Purchases.

Nope - you cannot restore a backup from a newer iOS version on to a device running an older iOS version. The reverse works, but in your case to use your backup, you must update to iOS 7.0.3 - no other option if you want to use that backup.

Not sure if this applies to your region, but in Australia the SIM password is often written on the "credit card" sized plastic card that the SIM was provided to you with the phone by the telco. Do you still have this? It could be in the iPhone box?

iPhones require a SIM card for activation, regardless of whether it is being used as an iPhone or an iPod.
Put a SIM in the device for the carrier it is locked to and activate it. The SIM can then be left it it or removed.
