I agree. I personally just want to downgrade to a single-app account, and the company makes this almost impossible to do. Is this even legal?

to reinstall CC shouldn't be a problem. You could download all the programs you need in the "try" Version from Adobe's download website. Because you have all needed serial numbers and so on, you can change your programs into "real" versions.
Maybe it'*s necessary, that you have to activate/deactivate pleae have a look there:

I got creative cloud and want to sell lightroom 5. How can I release the license?
I don't know how to do this, but I want to make sure that the new buyer can use the software properly. I bought this and a month later, uninstalled it when I upgraded to creative cloud. I don't know how to release the license so I can sell this software to a third party. Maybe that isn't needed, but I need to make sure they can license it on their computer. Please help since I don't know how to find out and my buyer is waiting to hear. Thanks so much!

Even though i have a year student subscription with creative cloud when i try to open the programmes a window comes up for free trial or to buy the product. I was clicking the free trial option but i guess thats over now so it won't allow me to access the programs. Any suggestions?

you can activate on 1 mac and 1 pc, or 2 pc's, or 2 mac's, concurrently.
i have cc installed on 2 pcs and 1 mac. i can only activate 2 at any one time which works well for me because my pcs are at home and my office and i use them most of the time.
but when i travel i take my macbook so i just deactivate one or both of my pcs (uninstalling is not needed) and sign in to my macs cc app.
